Sweet Potato and Black Bean Salad

 ๐Ÿ  Hi, bloggers! Try this Sweet Potato and Black Bean Salad A fresh and filling salad that works as a full meal or a side dish. Great for meal prep too! Ingredients: 2 medium sweet potatoes, peeled and cubed 1 can black beans, drained and rinsed ½ red onion, finely chopped 1 handful cilantro, chopped Juice of 1 lime 2 tbsp olive oil Salt and pepper to taste Preparation: 1. Roast the sweet potatoes: Toss them with olive oil, salt, and pepper, and bake at 200°C (400°F) for 25–30 minutes or until tender. 2. Mix the salad: In a large bowl, combine sweet potatoes, black beans, onion, and cilantro. 3. Add the dressing: Drizzle lime juice, adjust salt and pepper, and toss well. Egg and Bean Molletes

 ๐Ÿณ Hi, bloggers! Breakfast Idea: Egg and Bean Molletes Here’s a super easy breakfast or dinner recipe that’s hearty and satisfying. Only takes 10–15 minutes! Ingredients: 4 bolillo rolls (or mini baguettes), sliced in half 1 cup refried beans 4 eggs ½ cup shredded cheese Butter (optional) Salsa or pico de gallo to serve Preparation: 1. Preheat oven or toaster oven. Spread a bit of butter on the bread if you like, then spread beans on each half. Sprinkle with cheese. 2. Toast the molletes until the cheese melts and bread is crispy. 3. Meanwhile, fry or scramble the eggs to your liking. 4. Serve the eggs on top of the warm molletes and finish with salsa.  ๐ŸŒฎ Hi, bloggers! Let’s make Quick Mushroom Tacos These tacos are perfect for a meatless Monday or any day you want a healthy and tasty meal. Super quick and full of flavor! Ingredients: 250 g mushrooms, sliced 1 garlic clove, minced ¼ onion, chopped 1 tbsp soy sauce (optional) Salt and pepper to taste 1 tbsp oil 8 corn tortillas Optional for serving: avocado, lime, chopped cilantro, or your favorite salsa. Preparation: 1. Sautรฉ the mushrooms: Heat oil in a pan, add onion and garlic. After 2 minutes, add mushrooms. Cook for about 8–10 minutes until browned. Season with soy sauce, salt, and pepper. 2. Warm the tortillas and fill each one with the mushroom mixture. 3. Serve with toppings of your choice. Done in under 20 minutes. So good and so simple! ๐ŸŒฑ Want more veggie recipes?
