Egg and Bean Molletes

Here’s a super easy breakfast or dinner recipe that’s hearty and satisfying. Only takes 10–15 minutes!
Ingredients:
4 bolillo rolls (or mini baguettes), sliced in half
1 cup refried beans
4 eggs
½ cup shredded cheese
Butter (optional)
Salsa or pico de gallo to serve
Preparation:
1. Preheat oven or toaster oven. Spread a bit of butter on the bread if you like, then spread beans on each half. Sprinkle with cheese.
2. Toast the molletes until the cheese melts and bread is crispy.
3. Meanwhile, fry or scramble the eggs to your liking.
4. Serve the eggs on top of the warm molletes and finish with salsa.
