Sweet Potato and Black Bean Salad

A fresh and filling salad that works as a full meal or a side dish. Great for meal prep too!
Ingredients:
2 medium sweet potatoes, peeled and cubed
1 can black beans, drained and rinsed
½ red onion, finely chopped
1 handful cilantro, chopped
Juice of 1 lime
2 tbsp olive oil
Salt and pepper to taste
Preparation:
1. Roast the sweet potatoes: Toss them with olive oil, salt, and pepper, and bake at 200°C (400°F) for 25–30 minutes or until tender.
2. Mix the salad: In a large bowl, combine sweet potatoes, black beans, onion, and cilantro.
3. Add the dressing: Drizzle lime juice, adjust salt and pepper, and toss well.
